Ingredients:

1 Tb olive oil

1 large ham hock

1 cup onion, chopped

1/2 cup celery

1/2 cup green pepper

1 Tb garlic

1 lb. black-eyed peas

1 qt. chicken stock

Bay leaf
-
1 tsp thyme
-
Salt, pepper, & cayenne

3 Tb green onion
-
3 cups cooked rice
Directions:

Heat oil. Cook ham 4 min.

Add onion, celery, green peper, garlic. Cook 4 min.

Add peas, stock, bay leaves, thyme, seasonings. Simmer 40 min. or until
creamy & tender. Add liquid if necessary. Serve over rice.
